The following year I brushed off the recipes to earn extra Christmas money and added my own frozen, ready-to-bake scone recipe, which outpaced the cookie dough sales. Starting with cinnamon chip scones, I added cranberry orange scones, chocolate cinnachip, and a savory spinach feta. I love to create delicious foods from scratch appreciating the fullness of flavor using all natural ingredients. Scones were just becoming popular in 2008 so I wanted to offer something people wouldn’t want to make from scratch or be able to easily make for themselves.

At the home property, water is evaporated in a big greenhouse called the solar tunnel. Salt is crystalized using primarily solar and wind evaporation, harvested by hand and set aside to complete the drying stage.
